Soft Molasses Cookies

For days when you're short on time (i.e. for me, most days), you can mix up a huge tender soft molasses cookie in about 10 minutes. Bake for 10 minutes, and boom! you're ready to go.

Soft Molasses Cookies (egg-free)

1 1/2 cups whole wheat flour
1/2 teaspoon baking soda
2 teaspoons pumpkin pie spice
6 tablespoons butter, softened
6 tablespoons packed brown sugar
2 1/2 tablespoons molasses
2 tablespoons applesauce
1 teaspoon vanilla extract
2 tablespoons sugar, for sprinkling on top

Combine all ingredients in a food processor and blend until combined well. Press onto a lightly greased cookie sheet until a uniform thickness of about 1/2 inch, and sprinkle with sugar. (Mine covered about 2/3 of a cookie sheet.)

Bake at 350 degrees for about 10-12 minutes or until the edges get a little crispy and the middle no longer appears doughy. (Don't overbake.)

Let cool before slicing and eating.
